Key Responsibilities:

  • Deliver exceptional wine service through thoughtful recommendations and engaging storytelling that bring each bottle, producer and vintage to life.

  • Guide guests through our wine selection with confidence and expertise, creating considered pairings that complement the menu and reflect individual tastes and occasions.

  • Support the day-to-day running of the wine service, ensuring consistency, efficiency and the highest standards of presentation.

  • Work closely with the wider Sommelier, Culinary and Cambridge House teams to deliver memorable pairings, personalised experiences and seamless service.

  • Share your knowledge through tastings, briefings and on-the-job training, supporting the development and confidence of team members.

  • Assist with cellar organisation, stock management, inventory control and the careful handling and storage of wines.

  • Stay curious about new regions, producers and vintages, contributing ideas and recommendations that enhance the guest experience and support the commercial success of the wine programme.

  • Maintain exceptional standards of professionalism, responsible alcohol service, licensing compliance and cellar safety.

  • Previous experience as a Senior Sommelier or experienced Sommelier within a luxury hotel, fine-dining restaurant or high-end hospitality environment.

  • Strong wine knowledge across classic and emerging regions, grape varieties, vintages, producers and winemaking techniques, with a genuine appetite for continued discovery.

  • A recognised wine qualification, such as WSET Level 3 or above, or an equivalent qualification through the Court of Master Sommeliers, would be advantageous.

  • Demonstrable experience in wine service, food pairing, cellar management, stock control and ordering, with an understanding of commercial performance.

  • A collaborative approach to developing fellow team members, sharing knowledge and contributing to a positive, supportive working culture.

  • Flexibility to work shifts, including evenings, weekends and bank holidays, as required.

  • Right to work in the United Kingdom.
